Clean eating for more energy on the course

Here is a simple recipe for a healthy Chicken Caesar Salad, by removing the negative health impacts of dairy and eggs from the dressing but without sacrificing taste, you will feel more energized rather than tired after your meal.
Egg-free, Dairy-free, gluten-free option, Chicken Caesar Salad:
2-3 Tablespoons fresh lemon juice
3 Tablespoons extra-virgin olive oil
1 ripe avocado, pitted and peeled
1 teaspoon sea salt
freshly ground black pepper to taste
½ teaspoon Dijon mustard
1 teaspoon anchovy paste
1-2 garlic cloves, finely chopped
6 Tablespoons water
1 head romaine lettuce, washed, dried and torn into bite-size pieces
croutons for garnish, if desired
Make the dressing: Combine all the dressing ingredients in a blender and blend until smooth and creamy. Add salt and pepper for taste. Toss with the lettuce using as much of the dressing as desired.
Top with any pan-fried or BBQ'd chicken breast. I pan-fried mine in olive oil and Fig Balsamic Vinegar.
